Classic, warmly spiced gingerbread cookies made gluten-free and sweetened with coconut sugar and blackstrap molasses. No refined sugar is added.

Makes: about 24 cookies | Prep: 25 minutes | Chill: 1 hour | Bake: 8–10 minutes per tray

INGREDIENTS

• 2¼ cups certified-organic gluten-free all-purpose baking blend, checked for soy and refined-sugar ingredients

• ½ teaspoon baking soda

• 1½ teaspoons organic ground ginger

• 1 teaspoon organic cinnamon

• ¼ teaspoon organic ground cloves

• ¼ teaspoon fine sea salt

• ¾ cup organic coconut sugar

• ½ cup softened organic unsalted butter

• ⅓ cup organic blackstrap molasses

• 1 large organic egg

• 1 teaspoon organic vanilla extract

• 1–2 teaspoons organic milk only if needed to bring crumbly chilled dough together

DIRECTIONS

1. Whisk together the flour blend, baking soda, ginger, cinnamon, cloves, and salt.

2. In a separate bowl, cream the butter and coconut sugar until evenly combined. Beat in the molasses, egg, and vanilla.

3. Mix the dry ingredients into the wet ingredients just until a soft dough forms. Divide into two discs, wrap, and chill for at least 1 hour.

4. Heat oven to 350°F. Line baking sheets with parchment. If the chilled dough is crumbly, knead in milk 1 teaspoon at a time until it holds together.

5. Roll dough between parchment to about ¼ inch thick. Cut shapes and transfer to the lined sheets, leaving space between cookies.

6. Bake 8–10 minutes, until the edges are set. Cool on the pan for 5 minutes, then transfer to a rack. For softer cookies, use the shorter bake time.
